The Icelandic volcanic eruption in April prevented the Welsh Culinary Team from competing in a prestigious competition in the Far East but the team bounced back from the disappointment of missing the FHA Culinary Challenge in Singapore by winning gold and silver medals in the Culinary World Cup held in November in Luxembourg.
Our head chef, Gennaro (on the left), was once again selected for the Welsh Culinary Team and won his individual silver medal doing the cold table, and a Festive platter for 8, which had to be fish based, with five different terrines and garnishes.
The competition was divided into two elements - hot kitchen and cold buffet table - and Wales was up against 24 other countries from around the globe at the prestigious event. Wales came in first place on the cold buffet table, winning the gold medal. They also took silver in the hot kitchen event after coming in second, just a few points behind the winners.
In the hot kitchen the Welsh chefs cooked a three course meal for 110 diners. They served up a starter of roulade of lemon sole and scallop, smoked salmon gel, crab and smoked salmon roll, carrot and golden raisin salsa and a citrus and dill hollandaise sauce. Main course was pan roasted breast of duck, confit leg and cabbage, braised potato with pickled vegetables, bacon and egg, carrot and orange puree and a truffle jus. The meal was completed with a dessert of whipped chocolate mocha with liquid raspberry, warm raspberry pastel shortbread, espresso and Belgian chocolate layer cake.
Their cold buffet table was based on a mediaeval castle theme. The centrepiece was a specially made red dragon astride a castle turret with a drawbridge surrounded by food items on the same mediaeval theme.
